An Unusual Dinner

Sheila and I both have some issues with cholesterol plus additional dietary restrictions due to our own health problems so we've been fairly careful about what we eat in recent months.  Well, that is not entirely true.  We both have had dietary restrictions for years but now we have both added the high cholesterol dietary restrictions and limitations.  

On the positive side, neither one of us has an appetite like when we were younger so cutting some stuff out of our diet has not been much of a problem.  We often can split a single dinner.  Eating less is not a problem for either one of us.  

I've had significant dietary restrictions for about 15 years and, as a side effect of that and my health problems, I've been eating far less.  Adding in some cholesterol restrictions or limitations really isn't much of a change, to be honest.  

Tonight, however, was something unusual for us...  a dinner without any meat whatsoever!  I'm big on balanced meals that include meat, potatoes and vegetables so this was a pretty drastic departure from that...



I saw a recipe in a magazine that looked halfway decent.  I have a bit of a routine when I find an interesting recipe so I stepped through this routine in my head when I saw this particular recipe.  First, I read the recipe completely.  Then I imagine those ingredients together and what they would taste like as specified.  Then I imagine what I might want to change.  I think about which ingredients pair well together...  and which I would eliminate.  Then I think about which ingredients I might add to the recipe that might add some depth to the recipe while also making it my own.  I ran through this routine as we headed to the grocery store this evening. 

The first thing I had to find was Naan bread.  Our local grocery store doesn't always have this so this is what I needed to find first. They had it tonight.  Then I started collecting the rest of the ingredients.  The Naan bread is really what makes this dish so good so we needed that ingredient, for sure!

The rest is pretty simple... dressed Arugula with corn, olives, mozzarella cheese, and various beans (I'm thinking of adding some sort of chopped nut next time too).  It is dressed with a sweet but tangy dressing.  The Naan bread is hot while the filling/topping is cold.  

I have to say it was tasty...  but...  I couldn't help but wonder what type of marinade I would make for a tender grilled steak to be sliced up and added as an additional topping...
