French Toast for Breakfast

This has been a French toast weekend!   I have a fresh loaf of Challah bread on hand so I made French toast both Saturday morning and Sunday morning before the bread gets moldy.  I had some fresh blueberries to go with it too.  Sometimes I make a blueberry compote but this time I left the blueberries whole.   I've been making my French toast using Challah bread in recent years...  which allows me to make it much thicker than usual...  upwards of two inches thick...  and the Challah bread adds a very nice texture with a smooth taste.  At this point, there is no way I could ever go back to making French toast using white bread!  I soak the Challah bread liberally in a thick batter...  pan-fry it slowly over low heat...  with a crispy sugary outside to the toast.   Depending on how I feel, I sometimes add powdered sugar before serving it and I felt like that this morning so it is dusted in powdered sugar too... EDIT...

Another Typical Fever-free Morning

A lthough I still don't feel even close to 100%, I'm feeling far better this morning than I did during my fever last night.  This is very typical whenever I have COVID...  which is far too often...  and we don't go anywhere!  As mentioned in previous blog entries, this time I picked up this insidious virus in the hospital ER waiting room seven weeks ago.  As always with COVID, I feel worse and worse as the day wears on culminating with a fever at night.  Then I get up in the morning and I feel halfway decent.  Within a few short hours, I can notice my health deteriorating again. I made Challah French Toast this morning and it definitely hit the spot! Hopefully, tonight I won't feel as lousy as I did last night.

Breakfast

I 've been waking up pretty hungry lately.  I'm not sure why but it may have to do with taking so many extra H1 blockers.  Those class of medications tend to make people very hungry.  Whatever the reason, I've been hungry in the morning so I have been making larger breakfasts for myself. This morning, I made some French Toast with fresh raspberries and some bacon on the side... Breakfast was delicious but this wears me out.  I slept for two hours or more after cleaning up all the dishes from breakfast.  This caused me to miss lunch. The other problem with these big breakfasts is they won't be helping my cholesterol levels at all!  It hit the spot this morning though.
